I live in North Dakota and tis the season for cold weather. I have a 15 conical fermenter that I have on wheels in my garage so I cannot ferment inside the house anymore. I set my garage heat at 55-58 and I am looking at yeast strains that will work in this environment.

Here is what I have in mind so far.

Any strains I am forgetting about?

The California Common strains will work great. They are more lager like, but so is pacman, especially at under 60 degrees. The San Francisco Lager Yeast, WLP810, and the wyeast 2112 strain would be perfect at those temps.

Wyeast 1728 Scottish ale is supposed to be good down to 55 degrees. Something malty might be in my future
