I have a brew in secondary now for 7 days. Racked over from primary after 7 days. Gravity readings were right on the money when I racked it

Question is the airlock still had pressure, no bubbling for 6 days, but pressure still in there.

Is it best to wait before kegging or bottling until all pressure is gone? Or does it matter if gravity readings are stable

Go by gravity. Pressure in the fermented can be due to off-gassing of CO2 or temperature fluctuation.
