I have looked on the forums for quite a bit with the search feature and have read up quite a bit on conditioning a beer. However i could not definitively find what exactly the yeast is cleaning up. This is more of a curiosity question.

Mostly by-products of their fermentation, like diacetyl.

The yeast create diacetyl during active fermentation, and then when all of the fermentable sugars are gone, they go back and eat whatever they can digest. That includes their own waste products, like diacetyl.

After the yeast have gorged themselves on sugar and puked all over the place they go back and eat their puke. It's sort of like going to the Chinese buffet when you are super hungover.
