adding Carafa III to an IPA

It depends if it is Carafa III or Carafa III Special. The special is huskless and doesn't provide a whole lot of flavor in small amounts.

If you want the roasty flavor then I would either up the amount added or add a bit of chocolate malt or roasted barley.
 
Its special, I just want to add a bit of color without having to use too much crystal malt, but I want to avoid giving the IPA a roasty flavor.

Tasting the grains leaves me worried that I'll get some roasty flavor, as they have a slight roastiness (nothing like roasted barley though).
 
I haven't used the III but the Carafa II (normal, not dehusked) gives you a slight chocolate flavor when used in small amounts, in addition to a darker color. I think maybe you can think of it as a milder version of Chocolate Malt.
