So, I made a rookie mistake. Brewed a Christmas ale. During the boil, took a reading and the gravity was 0.02 off. Was supposed to be 1.07 and came in at 1.05. So, added some DME to get it to 1.07. BUT, forgot there was a 1-pound of honey addition at the end. So, now the wort has clocked in at 1.092 while sending to the fermenter. I am concerned that the beer will be too sweet. Is there a way of adding bittering during or post fermentation prior to bottling?
