Hi all,
I've forgot to add pectinase enzymes after the apple pressing on 26th December.

May I add them now or it's better to wait until it clears by itself and, if it doesn't, add them after the fist racking?

Thank you all!

It will work almost anytime both during the ferment and after.

Thanks CKuhns, I'll try to add it now.

I'll update about the results.
The fermentation is very low (sg dropped from 1,066 to 1,052 in 11 days) and I hope it will not affect fermentation speed and the final result.

I added yesterday... Maybe I was still in time cause the fermentation is slow and the alcohol isn't too high.

I'll update you with the results!

@doublejef i have used it after secondary in ciders at 8% It works just takes up to double the amount per gallon and a bit more time.

See this note from EC Kraus for more info.https://blog.eckraus.com/when-to-add-pectic-enzyme-for-wine
