So I made a West Coast Double IPA and my grain bill is at about 19lbs total for a 5 gallon batch. I'll be sitting somewhere in the high 7's or right around 8% abv when all is said and done but I wanted to get it up to around 8.5% or maybe even a little more? I know I could find ways to greatly increase my mash efficiency as it only sits around 70-75% but would it drastically alter my taste to add about 1 lb. of DME to the mash to get that abv where I want. Thoughts on what the best route to go would be greatly appreciated.

Cheers!

I always keep some DME around in case my mash efficiency doesn't come out where I was expecting.
Basically adding DME late boil is the same as getting a better extract % out of your base grain.

fwiw, it actually is pretty common for higher octane IPAs to include 5-10% simple sugars.
I have some wcipas that use corn sugar and some neipas that use turbinado sugar...

Cheers!
