Hi everyone. Wondering if you could give me advice.
3 weeks ago I brewed an Amarillo Saison using WLP568. Last week I checked the hydrometer reading and I hit the target gravity and it was steady for 3 days before racking it to a secondary to dry-hop. It's my first time dry-hopping and I noticed that it doesn't look like it's completed it's fermentation. I moved the fermenter onto my counter last night so it could settle from the small amount of shaking during the move before I keg it.
Today I noticed that there were still small bubbles forming and I could see CO2 bubbles(?) moving through the beer to the top. I also noticed that there are small specks of yeast moving up and down the beer so I'm wondering if it really is done or not. The top of the fermenter is a little darker than the bottom half so I think there's still some yeast in suspension which may be active. Am I safe to keg or should I leave it for another week? Maybe cold crash and then transfer?
