Hi, so I'm currently brewing my first purposeful sour, and while brewing, I kicked my lek of saison. I went to kee up my pale ale I brewed a few weeks ago, and noticed a pellicle on top. I pulled the lid off and smelled it, and it smells like a super happy, slightly tart, but pretty good smelling beer.

Now my question: what would you do with this beer? Should I Pasturize it, keg it up, and drink as is, I or should I add some bottle dregs to it and age it for a normal time? What would you do?

I would taste it. If it tastes fine I'd keg it.
When it's out replace the keg seals or whatever plastic/rubber parts touch the beer.

Personally I wouldn't spend 6-18 months waiting around for Brett to finish on a beer that wasn't brewed for that purpose.
