A good beer to age...

I just found out that I will be working away from home for the summer and not access to brewing! :( I am looking for a good beer / style that will age nicely in a keg (for about 3 months) so when I return I have beer to put on tap.

Right now I am thinking...

- Belgian Dark Strong Ale
- Belgian Tripel
- Oaked Imperial Stout

Any suggestions? Recipes?

Also, should I carbonate before I stick in the cellar? Or just purge with CO2 and let sit then carbonate later?

Those would all be great, anything high gravity will usually age well, and actually need it to be fully mature.

I personally love Wee Heavys, but thats just me. :cross:

Once you transfer to your secondary to age you can leave it alone for months, however putting a quick CO2 blanket on top has become more and more used around here.
 
If you intentionally allow a high gravity beer to oxidize a bit over time, you get some nice sherry notes. Typical in barley wines.
