I brewed a beer and used Wyeast 3787. I was not able to control the temperature and it got to 80,6F after 5 days.

I should probably just relax, but I'm wondering if 80+ could be harmful for the yeast.

According to Wyeast it has a temp range of 64-78F.

as long as it didnt start that hot, you probably wont get any bad off flavors

I agree with m00ps. If you started out cooler for the first couple of days, then you are probably good. If it started out that hot from the beginning, call NASA and ask them if they want to buy some rocket fuel.

fwiw, I keep a brew on tap that's based on a Trappist refectory ale using 3787 that I start at 68°F and after 48 hours allow it to warm itself to ~78°F. It produces an wonderful array of esters that will be attenuated if run cooler.

If I had to pick an ale strain to run warm, 3787 would probably be it...

Cheers! :mug:

This is true but starting hot (80+ ) it produces fusels. The key is a day or two cooler then letting it warm up. One of my favorite yeasts.
