And my last beverage recipe from German-American Folklore, a really interesting drink.

56. Dandelion Wine
Pick just the blossoms, cutting stems off close to the flower or the wine will bitter. Put a gallon of blossoms in a kettle with a gallon of water.
Let it stand for 3 days.
Add the yellow rind of 3 lemons and 3 oranges. Boil 15 minutes, then strain. When lukewarm add the juices of the lemons and oranges, 4 pounds of granulated sugar, and 1 yeast cake.
Set in warm place for a week. Then strain and set away for 3 weeks longer. Then bottle.
Elderblossom wine is made the same way.
Aside from #58 Spruce beer, this recipe looks really interesting to me and I think I might try it when I get a chance. Let me know what y'all think of this old migrant wine recipe!
