I made a hefeweizen because I was so in awe of the one i had ontap in Frankfurt airport.

It was highly carbonated and was a wonder to watch.

I used a bottle carbing calculator to determine how much sugar to add to my keg. I don't like force carbing with CO2.

For 5 gallons and desired 4 volumes of CO2 it came up with 8.5 oz of dextrose which I added.

The internal pressure of my keg seems to be stable at 42 PSI at 68 F.

Based on brewers friend calculator i should have over 50 PSI for my desired 4 Volumes.

Any ideas?

The pressure can inhibit the yeast from finishing fermenting the sugar.

Moving it into 60 F environment to try and get the pressure down.
