Hello,

I am 3 weeks along in primary with my first cider. It is still showing signs of fermentation in the airlock. Just curious how much longer I should wait before the next step...and for that matter what the next step is.

-Should I transfer to a secondary..and if so for how long?

-Should I bottle, assuming I dont care if the cider clears up ?

-How much corn sugar should I put in each bottle when bottling to carbonate properly ?

-If initial gravity was about 1.068 what should I be looking for before the next step?

What was the recipe and what yeast did you use. Off the top of my head I would assume that this will go almost if not completely dry, in the .995-1.000 range. If you are down to 1.010-1.020 then I would rack it to secondary. I also never bottle before it is crystal clear and completely done with fermentation. For carbonation I do 1 oz per gallon, but if you must add it per bottle it should be between 1/2 and 1 tsp. per I believe.
