Ive got a very basic question, of which I havent found a good demonstrative answer----what is the third tier for??? What purpose does it serve?

Ok, I get the mash tun and the boil kettle. What is and where in the process is the third kettle??

Fly sparging without any pumps. Hot water for sparging (liquor) starts in the Hot Liquor tank and flows into the Mash Tun. At the same time the mash tun is drained into the Boil Kettle. Ideally the rate of flow into the Mash Tun matches the rate of flow out of the Mash Tun. The whole process of fly sparging should take about 45 to 60 minutes. Gravity does all the work.

Well, even batch sparging, you need a Hot Liquor Tank. Putting it above the Mash Tun lets you drain into the mash tun without a pump.
