Well I asked a couple weeks ago what is a good spice to mix with orange blossom honey. I got a response from a person on got mead. I went with there idea of having a cinnamon stick and then rack it to some vanilla bean and that was what I am planning on doing. Out starting gravity was 1.140.

A quarter of a clove and an 1/8th on a whole nutmeg per gallon will round it out as well.
