Is there any difference with the Mash duration or process for 6row vs 2row?? I wanted to use some just to experiment and since I have never used it before I just wanted to know if there was something unique to mashing 6row.
 
6-row is higher in enzymes, so it is usually used for grain bills with a high percentage of adjuncts (think American light lagers with lots of rice and/or corn). It also has smaller kernels, so there is a higher husk to endosperm ratio. This means slightly lower mash efficiency, but more husk is another benefit when using a lot of adjuncts.

Given a similar overall grain bill, 6-row should convert faster, so you might want to test for conversion sooner than normal.
