Coming up to brewtime again, and had an epiphany. I brew young's kit+kilo cider because it's nice and dry, tasty, and easy to look after. Earlier today it dawned on me, that kilo of sugar is just adding alcohol, why not use 2 kits instead?

Would you use BOTH packets of yeast*, or just one and keep the other for backup? ditto for the nutrient

*I use the dried yeast that comes with the kit because it ferments well and clears beautifully after about 3-4 weeks, and cakes up nicely in the bottle. Also i haven't found an alternative i'm willing to commit to.
