Chocolate Porter Recipe

Grains
- 8 oz Simpsons Chocolate Crushed Roasted (412L)
- 1.5 lb or 24 oz Simpsons Extra Dark Crystal (160L)

Extract
- 6 lbs Liquid Dark Malt Extract
- 1 lb Dry Dark Extract

Hops
- 1.00 oz Crystal
- 1.00 oz Cluster

Yeast
- Wyeast 1338 European Ale
Extras
- 8 oz Hershey’s 100% Unsweetened Cocoa Powder

I would say too much crystal, not enough chocolate malt (or other roasted malt) and to ditch the dark extracts and replace them with light extracts. You have no idea what went into making the dark extracts. With the light stuff you can be reasonably sure that it is mostly, if not all, base malt. By using the light and then the appropriate specialty grains, you are in control of the final beer - not the extract manufacturer. When using extracts I now only use Extra Light DME.
