FG: 1.025 SG
Batch: 5.0 gal

4 lbs Rice Hulls (Briess) (0.0 SRM) 16.3 %
18 lbs Wheat - White Malt (Briess) (2.3 SRM) 73.5 %
1 lb 4.0 oz Caramel Wheat Malt (46.0 SRM) 5.1 %
1 lb 4.0 oz Midnight Wheat (425.0 SRM) 5.1 %


Mash @ 154 for 60min

Hop Schedule:

1.00 oz Magnum [12.00 %] - 35.0 min 31.1 IBUs
2.00 oz Saaz [3.75 %] - 10.0 min 8.5 IBUs
2.00 oz EKG) [5.00 %] - 1.0 min 1.3 IBUs
 
probably WLP810 San Francisco Lager Yeast

or maybe us-05 not sure...

open to suggestions
 
If you have control of ferm temp, I'd go with the lager. I'm under the impression Baltic Porters are more often lagers than ales, even though I've seen both. This kind of looks like a wheat wine though so the us-05 wouldn't be out of place. Do you make yeast starters? That would help with the lager yeast.
 
That's why I was leaning towards a steam beer yeast lagering at higher Temps. How's the rest of the recipe look?
