I'm doing everything right (right?)...But still can't get rid of yeast off-flavors.

I've taken all the steps. Tried all the techniques. Bought all the equipment... But I still get a slight (subtle, but noticeable), off-flavor from my yeast in pale/light beers. I've been brewing all-grain for years and have made some great beers (including some medal winners) - but the issue...

    Coconut Blonde Help

I am looking to create a coconut blonde but can't get my hands on the hops I want. My initial thought was to pair some Sabro with 16 oz of coconut in the secondary but none of my local homebrew shops carry it, so I decided to use some hops I already have on hand. I have Huell Melon, Lemondrop...

Fermenting Blonde ale at 59F with Safale us-05

Hello everyone, I have a blond ale in a carboy fermenting with US-05. Set in freezer 1 day and a half ago at 59F, just raised the temp up one more degree to 60F as it wasn't bubbling much and there where just a few hints of krausen. Plan was to ferment low first week then blow it up to 68F on...

Off-Flavors, Super Dry Finish / Aftertaste

I brewed the Lefse Blonde extract kit from Northern Brewer. In primary for about a week, secondary for two weeks, in bottles for two weeks so far. I'm getting a very dry (too dry) finish and some off-flavors I can't put my finger on. Any thoughts as to where I went wrong on this one? Not...

Need a fast, quaffable Blonde Ale recipe

Family visiting for the holidays, some of them are into craft beer, others not so much...so the latter needs an easily approachable, light, crisp option. Problem is they'll arrive next week so I need to brew something that can be fastracked...a week in fermentation, a week in the bottle...

    Compensate or pull through?

I recently brewed my second ever all-grain recipe. My first all-grain brew was a borderline-disaster, even though the resulting beer ended up quite drinkable. I felt a lot more confident and made less errors for my second attempt - progress :) I read Palmers “How to Brew” (an excellent book)...

Another fruit in the beer thread. With questions.

I have many questions about adding fruit flavor to beers. I want to add peach flavor to my cream ale. I have searched the forums and am having trouble getting a straight answer. This is my 4th batch and it is a cream ale recipe from Northern Brewer that I want to modify. I am going to ferment it...
