    I did a Kate inspired stout 2 years ago and I think I calculated 1tsp port added per bottle from info on the Kate thread here (bourbon was 1 Tbsp added per bottle from what people were telling me). I moved across country so it didn't get aged more than a few months but it was great when we moved.

    Cacao nibs work well in stouts. They aren't sweet at all and taste almost dirty if you put too much in. I soak them in vodka for a few weeks and then pour the vodka in as I believe I got an infection from some nibs once.

    Most yeasts will take upwards of 6 weeks to carbonate at those temps in my experience. Bring them upstairs somewhere with an ambient of around 70 and you're golden in 2 weeks. Good luck.

    I think it would hold up pretty well. I might look at dropping specialty grains and would definitely drop the mash temp so it would be more fermentable.

    It happens. What temp you add them at matters though. There's a whole elite coffee association that's even more extreme than most homebrewers with their rules if you care to look it up.

    Some people get too much bitterness/astringency from adding the coffee this hot. It's all personal preference. I like to cool to about 180f and add the coarse beans then for a while before finishing cooling. I feel that it's a better coffee flavor. Next time I think I'm just doing a dry beaning...

    I'd do the black patent myself. From my experience the extract efficiency on specialty grain flavors and colors is way better than you get on a full mash in my experience.

    I don't have a good idea of how much yet, but KBS has more high kiln/roast to it. It's higher gravity and i'm pretty sure has a higher FG too (though not has high for the 2015 version which is the best one I have tried)
