Thermometer is good but was having that exact problem before, low OG and FG along with thin tasting beers were my red flag. Notty has always been a beast for me, use S05 more now for less attenuative beers. I hate thin beer, especially in the winter. Sent from my iPhone using Home Brew

Gotcha, but Im looking for a bit of heat without adding cayenne so I'm thinking Absolut Pepper vodka.

Thinking of a variant on this with a cinnamon and cayenne twist. The whole vodka thing makes me wonder about making a tincture with cinnamon sticks and Absolute Pepper, maybe some nibs. Thoughts?

Sounds high to me, Tasty Brew says 2.0-2.4. I will say I like less carbonation than most so YMMV.

Anyone use or have an opinion of Windsor Dry yeast with this? I heard attenuation is pretty bad. Maybe I could mash at 152 and get an acceptable FG?

I think 2oz would be perfect, great aroma on a 4.3% session IPA.

Wasnt debating you Yooper, it was for all the other people on here changing your recipe and brewing it to 8%. Forgot about the crystal in the extract recipe, my bad on that. FWIW I brewed the recipe with Palisade once and didn't care for it, YMMV.

The recipe of base malt and Thomas Fawcett Amber is clone worthy, no crystal is going get it to taste like DF60. Also, this beer SHOULD be 6% ABV. Not sure why some people are making it so its 7+ ABV. At this moment DF is saying they use Simcoe and Palisade. Having said all that its your beer...

I only get quality dry hop aroma with 3oz of hops, anything less is a waste in my experience.

Glad all of you had success with this, mine wasn't all that great. I think I had too many sugars or unfermentables that made a bit syrupy/ cidery.

Well it was nice almost meeting you! So whatta ya think about the Palisade/Simcoe combo they list for the 60? I did one but with S04 and didn't like it, probably the yeast more guilty than the hops.

They have a beer called DNA UK right now that's 4.5% and similar to the 60 Minute, very good. Also Firefly that's 5% I think, Marris Otter and Calypso, very good also.

Brewed today, upped the Vienna to 3 lbs with 8lbs of 2 Row. Used Nottingham, OG of 1.062. Mash was a bit high to start, 153-149.

You can get 5 gallon paint strainer bags at Lowes or HD pretty cheap, I use em and reuse them all the time.
