    The sauce is essentially a bechamel sauce with spinach, cilantro and roasted and peeled poblano and jalapeño pureed into it. It's definitely very green and it's delicious.

    In general I think San Marzano tomatoes is hype, basically a marketing ploy. 99% of people would never be able to distinguish a sauce made from them and one made from Hunts tomatoes that are 1/4 of the price.

    My MIL was born in Veracruz and I really like fish cooked in the Verscruz style. Huachinango a la Veracruzana which I have eaten many times but never cooked. I also like fish en papillote which I make a few times a year changing up the veg depending on whats in season.

    Pork loin marinated in soy, ginger, sambal oelek, garlic, zest and juice of 1 orange and scallion. This is the best pork I've ever made in the oven my wife and daughter were fortunate that I even shared it with them.

    Can't sleep so I made soup. That's what everybody does when they can't sleep right? Broiled, peeled and chopped 5 medium poblano chilis, chopped 2 large leeks and added 1 pound bag of frozen corn to 2-3 tablespoons each of bacon fat and olive oil. Cooked for 5-ish minutes(i wasn't counting)...

    I would think monteray jack would be closer to the melting cheeses of Mexico than mozzarella. I like Rick Bayless I was able to eat at 2 of his spots in Chicago a couple years ago and loved it.
