    So it's sitting in the fermenter at what temp? What's the room temp? If you can make a run for a couple bags of ice, you can stick the fermenter in the bathtub and fill with ice and cool water. If you can't get ice, you can still stick the fermenter in the tub and fill the tub with cold water...

    You're still coming in around 64 IBUs by my calculations. That's near the top of the scale for that style. You could save .25 of that simcoe for a nice addition to your dry hop.

    Don't worry too much about the hot break. The extract people already do the breaking back at the extractory (that's extract + factory). I'd stick to using the Saaz on your Dead Guy. They are fabulous hops, and Perle lacks some of their character. You could totally dry hop your Irish Red...

    Same stuff. Go for it. My dogs love these. They are mini dachshunds and I can't find treats small enough for them, but these I can custom cut nice and tiny. They also love to clean up the falling grain when I use my corona.

    Possible newb mistake...

    Straining is good. But don't worry, all of the crap (except the mobile yeasties) will settle on the bottom of the primary when fermentation dies down. Just be careful when you rack out of the bucket, not to disturb any of the trub on the bottom.
