    Pull a sample, and taste a small amount. If you don’t like it, no point in assuming any more risk. If it’s ok, go ahead and keg or bottle it.

    Mix Sugar, water, turbo yeast and you'll have "seltzer" in about 48 hrs. Its better if you ferment on the cold side and go slower though. The fast ferment can throw off some strong flavors. Its not beer, and you could add some fruit and call it wine, but I think calling it fruit seltzer...

    Yes, I just made an experimental seltzer/beer with just corn sugar and extract and hops with amylase in the fermenter and it went all the way down. Came out better than I expected.

    Depends what your definition of industrial bulk beer is. There are some smaller breweries that naturally condition kegs and casks, although finding them isn't that easy. I searched "breweries that naturally condition kegs" and found a few and also many stories about the practice.

    I only use hop bags when dry hopping; makes it easier to transfer the beer without clogging and if I'm feeling really frugal I can use the dry hops for bittering in another brew. :bigmug:
