    nothing that a cold crash and a dry hopping wouldn't fix :) give it a good aging maybe on some oak your patience will be rewarded ;)

    never had that problem ( overly sweet beer) I take gravity readings when a beer is done it is done and into the keg it goes but you are right it can indeed lead to bottle bombs all the best S_M

    62 is a bit low for 05 I like 64-65 they say it can be a bit peachy at cold temps I use 05 a lot but it is top cropped and I pitch lots so a couples hours is all it takes for me all the best S_M
