    Rookie mistake - help!

To be fair, some use Potassium Metabisulfite, of course some don't. I don't, but I boil the must. I have issues and raw honey is bad for me. Honey does have some amazing antibacterial powers though... Maybe he can dump a pound of honey in and that will serve as a protectant.

    Leaf beer?

If you count dried flowers, I have made hibiscus wine on several occasions. 1 to 2 ounces of dried hibiscus per gallon, sugar to achieve the desired OG, Yeast nutrient, water and wine yeast. Boil the water to dissolve sugar, add nutrient, flowers go in a grain bag, soak for 5 to 10 minutes...

    Alcohol from iced tea powder?

I am in the process with the same goal in mind, but on a different path. I tried brewing tea and fermenting, but the flavor didn't come through. I tried with a liquid mix, but that was terrible. Now my latest version is halfway through the process. I am making lemon juice wine, Think Skeeter...

Using a secondary bucket for conditioning

Honestly, I don't think he was trying to be mean. Just concerned for your safety. I love my glass, I have over 20 carboys which are glass. But I would never pressurize them. When I was a kid we did a soda and it blew up 8 or 10 bottles, a real mess at 12 oz. Go to a 640 oz container and you...

    Bottle Cap Size

I have an old stand capper as well. It belonged to my grandfather a long time ago. It is a much tighter crimp than the hand cappers I got with other lots. When I use the hand capper I can flick the cap off with my thumb. With the old stand capper the cap is almost verticle and I have trouble...

What are your tips for keeping costs down

RO water system on eBay for $129, I get drinking water and plenty of water for brewing. It takes a while to recovver the investment, but i am happier with the drinking water as well. Do not buy LME in bulk unless you are brewing enough to use it all quick. Buying DME in bulk helps save money...

    Fix it or leave it?

It would depend if you like session beers. But remember, your hop schedule is set up for 50 points. I would also check your math, I calculate you would need around 2 pounds of LME to make up 20 points in 4 gallons. Did you mean 0.56 pounds per gallon?

    GETTING INTO IT QUESTIONS

There are always ads on Craigslist and the like, somebody getting out of brewing. Usually just a starter kit, but sometimes a really fancy setup. Many want near full price. They don't move well. Plan on losing, sorry. I am planning on my kid inheriting, that is how I got 3 carboys (dad) and...

    Possible Infection vs Boiling Again?

Stick with the schedule, you don't know how much you have changed it, so how would you know how much to correct it? Time is on your side, taste when it is done, correct if needed. It might already be a good beer, just not exactly what you expected. If it turns out great call it a Bob Ross...

    Possible Infection vs Boiling Again?

It will be more bitter, have less aroma. on the other hand, it won't be a sour..... It will still be a beer. don't panic. Ferment it out, you can always dry hop later. I once had a blow off tube do a major suck back when i moved the carboy, I swear it took in a fruit fly. I took a deep...

    Priming Sugar Question

Did you boil the sugar? That helps dissolve it as well as sanitize it. If it is not fully dissolved it will sink to the bottom. Another possibility is some just have not fermented the sugar out yet. Not all the bottles will react at the same rate. Make sure they are at a suitable temperature...

5 yr old brewers best kit...

Well, I just started one from the 2011 expired date cans. The old cans were only 19 oz and were supposed to be done with a booster powder for about 3.75 abv and 2.25 gal. Even Mr Beer decided that was too little, the new kits are1 7/8 pounds now. I took the two red ale, and the two blonde ale...

5 yr old brewers best kit...

I can do that, just have to deliver on some mead for the wife first if I want to survive. The small cans expired in 2011 and the big ones in 2015. MB used to do 19 ounce cans with a Booster pack (they are all as hard as granite now), now it is a 1.875 pound can. The small cans in the box...

5 yr old brewers best kit...

Ritebrew has good pricing, I use Adventures in Homebrewing because the prices are good and I am close enough to drive, so no shipping cost. They repackage light LME out of a palleted carboy. Right now they are crazy busy, Covid really made brewing popular.... I switched to DME for stable...

5 yr old brewers best kit...

I buy dry yeast with the expiration years away, then refrigerate it. I have used it many times years after the date, always with good results, But my assumption was the yeast here was stored badly...

And I have to ask, what would be the advantage of no boil? Something that old I would prefer to boil just for safety.
