    I think a SMASH pale ale would be great. There are a lot of great versatile hops out there. I'd go with a Maris Otter base and choose your favorite hop.

    A slap pack is really still underpitching. If you want to get to a pitching count that's recommended, you need at least 2 packs.

    I agree, you definitely need some caramel type malts in there if you want some sweetness. I would probably do a half pound of caramel 60, I like the mid-range crystal malts in my stouts.

    There's plenty of yeast in there and it cools down quick. Nothing to worry about.

    It depends on how you calculated your recipe. If you calculated your recipe to be 5 gallons after the boil, you can either a) add more water before the boil so that it is 5 gallons post boil or b) top up with water after the boil to make it 5 gallons. You will get slightly different hop...

    Agreed. Unless you mixed it really well, the sugars are going to drop to the bottom at first. The yeast will take care of that though.

    4 days is definitely early. I never take a reading before a week. Even when it stops bubbling, the yeast are still working.

    And milds! I agree completely. You will notice a big difference between 2 weeks and 5 weeks. But if I'm bottling, I always try one after 2 weeks. You just can't help it.

    Sodium metabisulfite is not an ideal sanitizer, I would recommend Iodophor or StarSan.

    Generally, no. If it's infected, it's infected. Did you get a gusher when you opened it?

    Agreed, any of the 3 C's (Cascade, Centennial or Columbus) are great.

    I've seen some 7 and 7.5 gallon carboys, they were in labs at work and quite old. I almost snagged one a few weeks ago.

    Generally, no. Pitching two dry yeast packets into a 5 gallon batch won't hurt it.

    How do you use a vanilla bean in the secondary

    What works best for me is to split the bean and scrape out the inside (where the flavor is). Soak the inside of the bean in vodka for a day, then put the vodka with the vanilla into secondary.
