Quick question about lager and temp.

Yes that is exactly what I am doing except that I am leaving it in the fermenter for the 2 day diacetyl rest. I figure there's yeast in the fermenter which you need for the rest period. Racking into the secondary might remove too much yeast, although it's probalby not that big of a deal.

YA Rocky Raccoon's Crystal Honey Lager

In reviewing your recipie you stated .75 c DME for bottling. Isn't that a bit "lilte"? I thought you were supposed to use 1.25 c DME and only .75 c if you're using corn sugar. Perhaps you didn't get enough sugar in the bottle to card up properly?

    Lager - Racking to Secondary

Greeetings, well the lager is in the fermentation bucket and bubbling away in the garage. Once this is done I'll rack over to my carboy but I was wondering about the process to do that. I was under the impression that once you start things fermenting that you want to avoid exposing the...

    Lagering - Fermentation Cycles?

One other dumb lagering question... If you're lagering at or near freezing temperatures what do you do about your airlock? Do you need the airlock for the lagering? Maybe you could use a different liquid, like Vodka instead of water in the airlock? :) :)

Thank you for the info. This pretty much falls within the various responses I have seen on other sites and have read about in various Home Brewing manuals. We'll give it a try and see what happens.

    Lagering - Fermentation Cycles?

Greetings, I am working on my next batch of beer and found an interesting recipie in Papazian's Joy of Home Brewing. The recipie is the Rocky Raccoon Honey Lager and it look pretty straightforward to prepare. The instructions are a little vague on the actual fermentation process, however, and...

First Noob question about amount of Yeast needed

Thanks everyone. So what I think I am hearing is that a) the Coopers Dry Yeast package should be fine for a 5 gallon batch. The thing that I found odd is that the Wheat Beer kit included the smaller package of yeast. I would assume they know what they are doing and would include the proper...

First Noob question about amount of Yeast needed

Greetings, I have been reading about home brewing until my eyes are practically bleeding. I have read through the forum, read the FAQs and tips posts here, have the Dummies Guide to Home Brewing and read the online Home Brewing books and blogs. I haven't found a good answer, or really any...
