Rebel IPA, Sam's West Coast Interpretation

What 'east coast' IPA is malty? Lagunitas on the west coast has the 'maltiest' ipa's by far that I have ever had. Green Flash West Coast IPA has 8% carapils and 8% carastan so 16% crystal malts and it is still dry, delicious and not cloying or sweet. All the 'west coast' ipa's that people...

    Oregon Fruit Puree...

Resurrecting an old thread here. I was considering brewing a blackberry wheat for a wedding in mid September. Do you mash high to get a decent FG? Does the fruit puree ferment almost completely? I see a lot of recipes for a 1.05+ OG before they add 3 lbs of fruit puree (to 5gal batch) and...

want to try all grain without getting all technical like

+1 This was one of the first things I read before trying all-grain and it was great!

    Man I hate cleaning bottles

I force myself to either rinse immediately after pouring or by the very next morning before any of that crap can dry or else I'd rather throw it away. I just started kegging a few weeks ago though so hopefully will only bottle a six pack at a time.

    whats with the bottle hype?

If you want to donate $400-500 I will gladly limit bottling! #1 reason - bottling is cheaper #2 - that $400 is easily 10-20+ 5gal batches (20-40+ cases of beer!)... #3 - can't enter a keg in a BJCP competition (but you can spend another $50-75 to bottle your kegged beer)

to stir or not to stir

I made it through about 12 batches without stirring with no problems in distributed carbonation. Then I had one that had 1 case of explode 10oz of the 12oz of beer in your face when you open and 1 case of flat crap. Since then a gentle stir has become my standard, just for that 1 in 12 that it...

Really annoyed... First batch has had 2 gushers and a bad finish

The above was from 'bret00l' post I found in search. Also I just recently encountered a batch where the priming sugar hadn't mixed in and I had 10 gushers and 30 fairly flat beers and a couple just right. I had also always relied on the siphon to do the stirring; and after a dozen+ batches...

    Bottling sucks!

It definitely gets easier and easier each time. It now takes me 40-45 minutes to rinse, sanitize, and bottle 48-55 12oz'ers when I have a helper and 55-60 if by myself.

Wort chiller. To buy or not to buy...

I also bought my copper tubing from http://coppertubingsales.com/copper_tubing_prices.php You can buy a 25-30ft chiller for $60-75 or make a 50ft chiller for $40-60; so saying you can buy for the same price is false. You can buy a 50ft chiller for $110-140.

    hops suggestions for oatmeal stout

There is a whole style of stouts with the "C" American hops called American Stout http://www.bjcp.org/2008styles/style13.php#1e I imagine the flavors work or it would not be a style.

    How much time?

good things come to those who wait! waiting is not fun, but you will reap the rewards!

    Double Fermented IPA?

A double IPA is just a scaled up IPA, with more malt (sugars) and more hops with the same process as if you were making a PA or IPA. So no special fermentation process. "Double Fermentation" would mean after the initial fermentation process you: A. Added a higher attenuating yeast to further...

    rolled oats vs. flaked oats

    Who uses a funnel screen?

Likewise tried the funnel screen just once. Huge PITA. Now I use a paint-strainer bag and an EZ-Strainer from US Plastic that perfectly fits the 6.5gal bucket. EZ-Strainers™ - US Plastic Corporation

    Really, a light extract dunkel?

I would judge off the taste not color.

    Muslin vs Nylon?

Muslin are cheap and meant to be tossed after use. Nylon is meant to be reusable. It's really a personal preference generally. If you brew a lot the $0.50 muslin bags will eventually cost more than the $5.00 nylon, but no cleaning required.

    Repitch Question

if the water was over 100F when you added the yeast then most likely yes its dead. You reversed the cool-down and yeast adding part.

    What is a double?

generally means "imperial" as in higher alcohol and stronger flavors and larger quantities of malts to keep the alcohol flavor in check. Most are 7.5-10% alcohol so doesn't take much to get intoxicated.

    How much idophor?

If it calls for 3/10th's of an ounce that it is less than 1 tablespoon. A Tablespoon is half an ounce (5/10th's).
