    My LHBS has them. In the newsletter they were described as exhibiting characteristics of certain German noble hops, namely Tettnang and Spalt. I haven't used them myself yet, but that should give you a good idea of their character and where they would make good substitutions.

    Was the primary at the same level as the container you were siphoning into? Whatever you siphon into has to be lower than the original container. Once the liquids reach the same level the forces are equal and you won't get any more transfer.

    handling bulk extract

    Yikes, I have no problems with LME as long as I'm using the whole can. If I had to store it, I would definately go with DME, not LME. Refrigerating will make it last the longest, but make it a huge PITA to measure out. Use it as quick as you can brew and next time use DME as your bulk extract.
