    First All Grain Brew

Way to jump into it! I did the same thing. I did one extract brew and then went straight to all grain. I make terrific beer IMHO. Enjoy.

Forgot to heat sparge water! What to expect?

Get the Brewpal app for the ipod/ipad/iphone. I have it and really like it. It has mash and boil timers that remind you of important events such as hop additions.

    Five Star 5.2 pH stabilizer

    Can you elaborate??

    i'm ready!.....i think

I jumped straight into all grain brewing after doing ONE extract brew. Before I did it, I read the pertinent sections of John Palmer's book and watched some Youtube videos (Joe Palvino and BobbyM both do some very informative ones). Initially I did 5gal batches but quickly realized that 15gal...

Centennial Blonde tastes like my Nierra Sevada

Two and a half months later I find this now a very nice beer. The harshness that was initially bothering me has settled. I'm quite amazed actually how different it tastes. I took a 3gal keg on a week long sailing trip last week and it was very well received, as was the other 3gal keg of...

Centennial Blonde tastes like my Nierra Sevada

This particular batch was brewed in early March and has been sitting in the conical until now. I hope that it still has room to mellow out a bit more.

Centennial Blonde tastes like my Nierra Sevada

Thanks Erroneous for your input and suggestions. It isn't that I don't like hops, I think that it is Cascade that I find a bit too "biting". I've brewed a few English Ales with IBU's around 35 that I really like. I also like to serve my beer to people who are BMC types and I think they find...

Centennial Blonde tastes like my Nierra Sevada

I just kegged a 15 gal batch of this recipe. On brewday I hit the numbers pretty much dead on and the beer finished where it should have. I must say that I was a little disappointed. I had previously brewed Biermuncher's Nierra Sevada Pale Ale and I found this recipe very close in taste. Has...

Where does everyone buy their malted grains?

For grains and equipment I've had good experiences ordering online. I've dealt with an few Canadian retailers who have all been good. In BC, I'd order from Chris at www.hopdawgs.ca who is from Vernon. He is a very helpful guy, always finds the lowest shipping rates and has good selection...

Calculating HCO3- level from other parameters.

Thanks rancidcrabtree for your input. The water report did not include phenolphtalein so I'm just going by the 1.22*Alkalinity formula. I guess the water profile only becomes important if you want to emulate certain styles made with rather extreme water profiles such as Burton brewed ales. It...

Thanks guys for the great info!

Calculating HCO3- level from other parameters.

Ok, so it's been a little while since high school chemistry so I need a little help. I got a water profile from the town which had all of the necessary info to plug into Beersmith 2 except the HCO3-. What the report does include is two parameters which I think should allow me to calculate...

IIPA infected, what to do now?

Maybe the name of your brewery "Kuntzbrewing" has something to do with the "off" taste? Just a thought ;):D

IIPA infected, what to do now?

How about bottling it in plastic bottles? That way if it turns into a bottle bomb it won't be dangerous. I have something similar floating in my last batch. I figured it was protein. The beer tastes fine.

    I'm in a pickle.....My yeast is dead.

You were correct Brightspot! Today the carboy has a beautiful krausen.....better late than never. Sooooo, the question now is, how will the mixture Nottingham and the Burton Ale yeasties get along together in the conical?

    I'm in a pickle.....My yeast is dead.

I wrote to White Labs prior to making the starter and their suggestion was to pitch it 12-24 hrs after making it. Rhat way the yeast would be in their growth phase, not their fermentation phase. I did consider making a starter from the dry but I didn't want to wait. I figured it would be...

    I'm in a pickle.....My yeast is dead.

I brewed a 15gal batch with a OG of 1.058 and put 11gal into my s/s conical and 4 gal into a glass carboy set up with a blowoff tube. The yeast I used was some Burton Ale yeast that had a best before date of Nov 28/11. I had 2 vials of the stuff and 2 days before I made two 1 quart starters...

I'm leaving a LOT of beer in the brew kettle--help

My wort looks like giant egg drop soup as well. Initially I thought I was pulling the trub off the bottom on the kettle. Now I'm thinking that most of the stuff is cold break protein. My counter flow chiller takes me from 200f to 60f instantaneously so I think that precipitates everything out...

    Yeast starter question.

Wow, what a lot of great responses. Thanks! My OG is going to be around 1.053. I think I'll make two 1/2gal starters. I wrote White Labs and asked their advice. If I get a response I will post it.
