    Hefeweizen Step Mashing

Went ahead with a rest at 122 (actual 125) for 20 minutes and added boiling water to reach 150 for 60 minutes. Worked without a hitch and hit an 85% eff. Sitting in the ferm. chamber as we speak, being all sexy. Thanks for the help!

    Hefeweizen Step Mashing

Hey all, My recipe calls to mash at 104 for 10 minutes, 125 for 20 minutes, 150 for 60 minutes, mash out at 168. I have never done step mashing, only single infusion and decoctions. I have a 20 gallon Rubbermaid MLT and a 20 gallon Kettle (also a 7.5 gal and 5 gal kettle). What are the...

    False Bottom problem's...

I just installed a new false bottom for my FlyGuy MLT and its damn near impossible to keep grains from seeping through into the wort. I vorlauf like 5-6 times and still grains are coming through. a) will this be a huge issue? b) whats an idea to fix it? Thanks!

    OG woes...

maybe someone can help me out.... My recent OG's have been placing my efficiency around 70%, always a few points off from my target efficiency. HOWEVER, my FG's are always a few points lower than intended, making the ABV similar to the target. Aside from my beers just being too watered...

Quality of the grind from online HBS

Barring buying your own grain mill, you should find a different source. I have always gotten at least 75% efficiency (great crush) with Austin Homebrew, their service is great and shipping is a fixed cost. * I am in no way affiliated with Austin Homebrew:) *

    Buffer 5.2, yay or nay?

I just took my mash ph for the first time ever and it was at 6.2, could be even higher since the ph strips dont read past that number! .....this could be a problem since ive done about 30-40 brews in all....... I have heard good things about the buffer 5.2 stuff, does anybody have any strong...

Decoction for a Northen Brown Ale?

Well it can't hurt right? Plus I think it would be an interesting experement just for myself if anything to see what a decoction would do for my Brown Ale recipe.

Decoction for a Northen Brown Ale?

Thanks for the help! I think i will shoot for 133 and 154, but we will see how close that actually is. If I cant figure it out via hand equation for the the amount to pull for decoction ill PM you if thats okay. Again, thanks for the help.

Decoction for a Northen Brown Ale?

Oh and also, sort of unrelated question but im curious.... for multi-temp mash schedules, can you do them if you dont have a direct heating element for your MLT? Ive been racking my brain trying to figure how I could do them but besides doing decoctions I cant.

Decoction for a Northen Brown Ale?

Sadly, I dont have good brewing software. I have a mac and that means BeerAlchemy (which I cant figure out too well) or Qbrew (which I use because of its simplicity). Anyway, I have read that you can just pull ~40% out for decoction without accurate measurement? I suppose if im wrong then I...

Getting into a rut, what can I do?

Im mostly looking for a cleaner beer, while being able to get more malty tastes out of my brews. Maybe im over-carbing, maybe my ferm. temps are too high (I do keep my fermentors in a closet :( ). I really just want to get more distinction from my brews, as far as being able to taste the variety...

Decoction for a Northen Brown Ale?

Holy crud, that sounds ridiculously malty! Gives me something to think about. I looked at Kaiser's video's, BTW, I thought they were amazing but I wish I could find one for a simple single decoc. Ive read up on them tons but its always easier when someone else shows/ explains them to you in...

Getting into a rut, what can I do?

I thought it was your attempt at making your creation look like frankenstein as much as possible. haha Very cool, but my MLT uses a braid for lautering and I have read you should use a manifold or a false bottom. Looks like it would be more than $5 :( Unless im wrong....

Getting into a rut, what can I do?

I for sure realize that doing funky mashes arent going to help me, I was just looking into the sour mash because its different. But no im not doing it to get me out of what I believe to be a funk in my brewing, the thread just kinda shaped into that. I really do need to improve on fermentation...

Decoction for a Northen Brown Ale?

Im actually using 2-row. This will be my first decoc actually. Any suggestions or tricks of the trade would be appreciated.

Getting into a rut, what can I do?

Im surprised it took this long for someone to ask this! Well I tend to not get the results I would like out of my beers, and i feel it may be because of my processes. Ergo, change it up and see if thats it. Im basically trying to weed out the possibilities.
