    Beers with higher OG's can take a bit longer to carbonate. I would give them another week. You might be surprised at how much difference a week in the bottle can make.

    It might be wise to think about the long-term health effects of drinking that much soda. You have to assume that her consumption is going to go up when it's so readily available. That much sugar is not good for a person at all. Weight gain and diabetes are two serious problems that come to mind.

    I don't think they would explode. The tanks have safety release valves that would vent the CO2 out. If anything, they would help extinguish the flames. Those two cylinders flying around at the end of the clip was pretty wild.

    I would for the CO2 before you keg it. Fill the keg up with CO2 before you rack the beer into it.

    It won't affect carbonation. Just hook it back up and you'll be good to go.

    In my corny kegs, the posts can be screwed on to either side. Also, the tubes themselves are interchangeable. If it weren't for the stamped-in "IN" or "OUT" in the black handle, it wouldn't matter which one went where.

    Gas QD's and liquid QD's are not interchangeable. Just switch the posts and you'll be fine. Leave the tubes in place.

    Secondary is definitely not necessary. At 10 days it may a little green yet. If it were me I would let it ride in there another day or two then burst carb it. It should be ready to drink by Sunday.

    As for the carbonic bite/carbonic acid theory, we all know what beer tastes like, both flat and carbonated. If you're tasting something entirely different (and bad) about the beer I think you can safely rule this out. "It's not that I don't trust you, it's that I don't trust anybody."
