    Backsweetening kegged cider

    I did it this morning. I added sorbate (1 Tbsp ... instructions said 1/2 tsp per gallon, so I went ahead and rounded up to 1 Tbsp.) Also dissolved another campden tablet in the warming cider. Took almost 60 Oz of honey to backsweeten to the point I was happy.

    Update: started tonight. Had to add approx 2/3 of another bottle of juice. Unfortunately the store was out of V8 Splash, so I bought a small bottle of pomegranate juice. OG is approx 1.045. Using Kolsch ale yeast

    I made my first ever 5 gallon batch a few years ago with store bought cider. As I recall I used both sugar and apple juice concentrate. Fast forward a couple years and I gave my sister a bottle and she raved, saying it tasted a bit like chablis. I finally drank the last bottle a week or so...

    Probably a good idea. Purge, refill and wait till the bubbling stops, them put it back in the fridge for another 6-8 hours, minimum

    Yeah. I'd leave it hooked to the liquid port overnight, and then purge and refill.

    Do you have your CO2 plugged into the liquid port? That adds to the surface area exposed to the gas when it bubbles through your cider/beer

    So the "set and forget" method of carbonating takes awhile. Simply putting it on higher pressure won't cause it to carb faster. IF you are trying to carb it fast, try putting the gas on the output line and bubble it through the brew. You should bubble gas through your beverage until it stops...

    BTW. Just checked and the alcohol tolerance with S-23 is supposed to only go up to 9-11% that's a but lower than where my cyser should end up
