    Temp overshoots in mash?

Forgot to mention that I recirculate for the entire mash through a rims heat stick. Just bought myself a pid output temp controller hopefully that will control the temps a little better as my other controller was just relay out on/off

    Temp overshoots in mash?

How detrimental to the final product can these overshoots be? I had a big overshoot when mashing my milk stout last weekend and I'm concerned the final product may turn out too sweet... It was up to like 88c for 5 mins and my concern is that it would have affected the enzymes that convert the...

My last brew way too sweet and malty

So I got 500ml of water and 25g of fuggles hops as this is all I had on hand. Boiled it for 30mins and added to keg! This morning I did that and I just tasted it and the sickening sweetness is gone its got a great bitter flavor. It's just very cloudy.. Will it settle out?

My last brew way too sweet and malty

I have no control over mash temps so I guess I will just steer clear of the kit in question! Or just try it with straight dextrose as it is fully fermentable???
