    Safale US-05's alcohol tolerance?

I brewed an IIPA that finished at 9.5% using 2 packets of US-05. No issues with the ferment or carbonation. Only thing I noticed was that it took a bit longer to achieve the proper balance in the bottle. At 3 weeks it was still sort of sticky sweet but after another couple of weeks the...

    White labs frozen

Dry yeast keeps just fine in the freezer. I keep a large stock of bread yeast in the freezer and pull out what I need for a couple of weeks at a time and transfer to fridge.

    White labs wlp565 saison I

I know that I should have waited but I couldn't. After just over two weeks in the bottle, I put a 0.5L in the fridge for 3 days. Cracked it open last night to a loud "pop" and the most beautiful looking beer. The color was a beautiful light gold with perfect white head. The flavor was...

    Lag Phase/Over Pitching

I would say your choice on fermentation temps has everything to do with the yeast strain. Many strains produce flavor compounds during the growth phase. Therefore, higher temps could enhance either desirable or undesirable flavors, or in some cases depending on the yeast strain, produce no...

    Clarification with aging a Tripel

Any recommendations on which bottles can handle the higher pressures?

    White labs wlp565 saison I

I just bottled this brew last night. FG was 1.008 (although I stuck my hydrometer in some water and think it is reading 1.002 off so actual FG at 1.006). No change from the reading taken at day 12. Aroma was nice and flavor good at 65F. After chilling for a bit in the fridge I detected a...

Relax...no worries. It actually prompted me to do a little more research into this particular yeast strain. Also, I have not yet bottled it. I am at 28 days and plan to bottle on Sunday. I have not taken another gravity reading but it has been quiet for many days. I turned off the heat at...

    White labs wlp565 saison I

I am confused! Your schedule had me pitch around 70, then raise 2 degrees per day to 90 (I actually only got up to 84), then hold until I hit 21 days. My assumption was that after the 21 days in the primary, it was ready bottle. Now you say "DO NOT BOTTLE." I did not know this strain had...

    White labs wlp565 saison I

Just checked the SG...1.008. That is over 84% attenuation! I followed the recommended fermenting schedule with pitching at around 67, let it free rise for 3 days, and then slowly ramped up to 81 (no more capacity). Aroma is subtle fruity with fruity/spicy flavor. Another week or so in the...

    White labs wlp565 saison I

Using the aquarium heater I have only been able to get this up to 81. I did acquire an old freezer so hopefully by the next time I do this I can actually get it up to 90! Next question as this has been in the fermenter for about 10 days...any issues with carbing up in the bottles? Any need...

    Fermentation temperature discussion

Just acquired a chest freezer that has been converted to a keezer. It is pretty dirty and got a healthy population of mold but I think I can save it. The best part...it was free. It actually has the tower, CO2 tank and regulator, and keg connect. The lines will need to be tossed and...

    Fermentation temperature discussion

I knew about the temp differences but did not think about the humidity problems. It was always a struggle to keep the humidity high enough when I was able to make cheese. I guess the best option is to build the freezer fermentation chamber for the beer and dig a "cave" in the back pasture.

    Fermentation temperature discussion

I have always used the ambient temp of my basement which is consistent but fluctuates throughout the year. I have also submerged my fermenter in a water bath to act as a heat sink. For the first time I am using an aquarium heater to raise temps for a saison. Question: how to you control the...

    High attenuation: always a contamination?

The US-05 will easily go over 80%. I brewed an Imperial IPA that went to 88.8% (FG 1.009) and was outstanding. The one thing that I have noticed (maybe with the bigger IPA only) is that you need to give it some extra time in the bottles. However, you have nothing to fear at 83% AA. It may go...

    WLP500 time to bottle/drink?

I pulled a sample last night. Fermenter temp was 67 degrees, gravity at 1.013 (1.014 with temp correction). That is a current attenuation of 79.1%. White Labs says average attenuation is 77%. When I pulled the airlock it was all fruity aroma. The sample had some fruitiness with plenty of...

    WLP500 time to bottle/drink?

My ambient temp was 69 degrees. I was really surprised to see my fermenter temp at 81. Never had the temp go that high, but also the first time using a Belgian yeast. The whole basement smelled of bananas. I hope that I pitched enough yeast to avoid some of the bubblegum but I guess I will...

    WLP500 time to bottle/drink?

I brewed a pumpkin ale on 11 Oct (OG 1.067) and I am fermenting at around 68 degrees. The airlock was bubbling within 5-6 hours (I used a 1.2L starter) and by day 2 it looked like it was boiling and the fermenter temp was up to 81 degrees. By day 3 fermentation was slowing and temp dropping...

    White labs wlp565 saison I

Thanks for the reply and info. Brew day is this Friday so I will get my start going soon. Very simple recipe for a traditional, highly fermentable, saison/farmhouse ale. Hoping to capture the belgian/french farmhouse character. It may be a while, but I'll try to post results once I start...

    White labs wlp565 saison I

Aschecte, with your vast experience using this yeast, assuming I follow your schedule of pitching at 70, free rise for 3 days, and then raise 2 degrees per day over two weeks to 90, how long should I plan to leave this in the primary? Also, is secondary necessary? My carboy is tied up so this...

    WLP 565 vs. Belle Saison

Thanks for the reply. I am checking with my LHBS to see what they have. Hopefully either this or the 3711. I am hopping with Saaz and EKG. What did you raise it to? I can either let it go where it wants or use the aquarium heater to raise it in a somewhat controlled manner. I would like to...
