    I've suffered through two infected batches. Hard liquor helps. I did dump one that was terribly infected.

    A Simcoe and Zythos experiment. 6% and 40 IBU's. I'm not a big fan of the Zythos blend.

    What is the minimum time you chill your homebrew?

    I shoot for 3-5 days, but sometimes I run short on the weekend and I have to throw a couple in there for 12 hours.

    When is it too cold to brew outside?

    In Florida I love sitting by the kettle in January, February and March. Any other month I run out, throw in some hop pellets and escape back into the air-conditioned comfort of my house.

    A crisp and clean 4.5 % Simcoe blonde. Light but flavorful (Simcoe).

    I took my daughter to the hot-ass-Florida zoo this summer. I had a burger and an ice-cold Coors light for lunch. I lived through it!

    2 most important things you learned/wish you knew

    1. Bottling in 1 liter plastic bottles with screw tops makes bottling day so much easier. 2. A chest freezer with temp control is easier that swapping out frozen bottles.
