Add 80 proof liquor to fight infection?

Best be safe. Give it to me and I'll take care of the problem.

    Forgot to add specialty grain

You certainly could. How much C40 did you miss out on? I'd use as little water as possible to minimize dilution of the existing wort. You could also just leave it be :)

Is 8 gallon kettle Enough?/ Average Size of all Grain Brews?

I have two kettles, a 10g and an 8g. I typically collect 7.5g and do a 90m boil to get 5.5g into the fermenter. The 8g is a little small. I generally add the last gallon to it over the course of the first hour. 10g is much more flexible, but 8 works. As for the keggle, keeping a full size...

Any good books on Starting a Brewery?

Nope. I've only experienced Sam through the documentary "Beer Wars". He may brew awesome beers, but his personal style annoys me. I wouldn't read a book by him.

Brewing High Gravity Beers with limited headspace

Thanks for all the responses. I read the Fermcap poll. Fermcap ordered :)

Brewing High Gravity Beers with limited headspace

Not foaming would certainly solve that problem. Two questions 1 - Anyone know more about this? "It is classified as a "process aid" because of its novel feature of being completely removed from the beer under normal processing conditions." I'm not able to view the videos on the product website...

Brewing High Gravity Beers with limited headspace

For my first year or so of brewing, I aimed for 5g in a 6g better bottle, resulting in ~4.5g in the keg. I eventually realized I should aim for 5.5g in the fermenter to get closer to 5g in the keg, so I don't have to brew quite as much. The last couple of times I've brewed high gravity beers...

    First 10 gallon batch!

Oh, I don't think AG boils reduce more. I was assuming that someone doing a 10g extract batch in a 12g pot wasn't starting with as much volume as they would doing the same batch as AG.

    First 10 gallon batch!

I suspect you'll want the extra space if you go to all grain. My 8 gallon pot is a little small for 5g batches, since with all grain I end up collecting around 7.5g that reduces to 5.5g. Once trick I use is gradually adding the last runnings as the water evaporates off.

High temp environments (eg. Arizona fermentation)

I don't mind using a cold water bath the 2 or 3 times are year I need it. However, if I lived somewhere that hot, I'd: A - do all my brewing in cool weather B - do all my hot weather fermenting in a converted fridge or freezer. I say that mostly because the home grown solutions (wet towels...

Wort Chiller - How many feet start to be counter-productive?

Before I switched to no-chill, I used a dual copper chiller. My 25' 3/8" ID copper would cool off a 5g pot in 10 minutes during the winter with 40F water. However, in the summer, the water was 65F and chilling could take 40 minutes. I had 20' of 1/4" ID copper tubing lying around, so I used...
