    Why didn't you just ask him if he thought it was illegal or he felt it was dangerous? It could have ben he initially thought like one of my neighbors I was frying turkeys all the time, which would be really stupid in the garage.

    Not interested, too many seasonals I am not interested in. For me one of my greatest joys in brewing is creating and adjusting recipes, I have only done 1 kit in 6 years.

    I have heard at least one brewer on The Session mentioning using bags. Thing is with smaller craft brewers are pretty near using the same technic homebrewers are, tbe bigger guys obviously not so much.

    That is a pretty good option, I don't find late addition dme to effect taste when I have added a pound or 2. I have never added top off water, but I doubt it would make a huge difference. Before I hadmy 16 gal kettle I often boiled the 3rd sparge on tbe stove and added it as my main kettle...

    I agree with giraffe, in must cases tbe ferm temp is really important during the yeasts growth period and less so later, with in reason. As far as I understand. I would probably drop tbe temp slowly if any fermentation was still occurring.

    I don't see how it would hurt to leave it on gas, but if you want to free up the line just attach it once a week to insure it stays at pressure.

    Not sure what European Pilsners you are drinking, but the better ones certainly have bitterness and Noble hops aroma. Certainly nothing like a WCIPA, but mucb more than an American adnunct Lager.

    I would say a Scottish ale is about as close to the polar opposite of a very hop forward West Coast IPA. All about maltiness and just enough hops to claim they are there.

    I'd second going with kegs. You can get some decent deals on multiples of pinlocks. Adventures in homebrewing has 4 pinlocks for $140 on sale right now. I'd imagine other retailers do also. With all the other work you will have leading up to the wedding bottling 300 beers would suck.

    If you think it tastes fine go for it, since you are kegging there is no real risk. More time would probably improve it, but if you are happy who cares. Let us know how it turns out.

    I think that is the generally accepted view, but there is enough variation from both coasts no that it has less geographical meaning today.

    If you whirlpool well and give enough time for it to settle you don't need the bazooka screen.
