Does Honey Malt Belong in an IPA

As many have said here, I will recommend against using too much honey malt unless you are brewing a brown ale or something along those lines. I use honey malt mainly for color adjustment with additions around 1-1.5%, as honey malt gives me that orange tone I’m always looking in my NEIPAs. This...

How many malts do you need in a recipe?

Malts can be used to control mash pH and avoid complex water adjustments too. A little bit of Crystal added to a base malt can help you achieve mash pH even if you are using only distilled water with no salt additions.

    Rahr 2-row

Other than TF Golden Promise, Rahr has become one of my favorites, just received a 55lb sack of their Pale Ale malt, very excited to see how this one delivers as opposed to the 2-row version.. Dino pics included

    Safbrew T-58: Holy crap!

jrfuda, LOL, I think your problem is that the refractometer is not supposed to be used with a sample that contains alcohol (only for wort samples), after fermentation only a hydro will be accurate....

This was @WWJPD recipe BIAB with gp, flaked wheat and 2-row, and some (1oz) amarillo at flameout (in addition to the other hops), also triple dry hopped where the 1st dry hop (mosaic, citra and simcoe) was added right in the middle of ferm, 2nd dry hop right after ferm was done and included...

    On Cloning Bissell Brothers Swish

Just bottled my third batch of the recipe posted which I used WL007 and triple dryhopped with mosaic, citra and simcoe. Mashed at about 156F and finished on target at 1.014, the aroma is a blast and haziness spot on!, including picture below

    Lagunitas 'Born Yesterday' Clone?

This beer is the most awesome shelfie I've ever had. This year (2016) the beer was listed at the Lagunitas website at an OG of 1.063, 110 IBUs and 7.0%ABV (FG of 1.010). The hops listed for 2016 were approx 11lbs-per-barrel of fresh (wet hop, unkilned whole cone) Simcoe, Citra and Mosaic and...

    On Cloning Bissell Brothers Swish

After @armarino shared this post, I brewed a 3 gallon batch version of the recipe that WWJPD posted and the beer was amazing, I had to use azacca hops since I could not find apollo. The WY1056 did a nice job attenuating to 1.011 and the hazyness was super!, definitively recommend everyone giving...

    Apple pie idea

Not sure if you want to boil the juice concentrate along with the water/DME, maybe pasteurizing is a better way (if it is not already or you want extra assurance) - this is one pasteurizing recommendation I found online https://www.leaf.tv/articles/how-to-pasteurize-juice-at-home/ Another...

    Hop and Fruit Glycosides Anyone?

Thanks Tandem, I'm working with my homebrew store to see if they can get the "Uvaferm 228" through regular tube sizes by white labs serial WL727 or can get smaller portions of Uvaferm as it is available in 1 lb bags for wine makers. Maybe they can look for Pichia as well. I'm definitively...

can't get that big juicy hop flavor in my IPA's

When I asked one of the brewers in tired hands he mentioned that it's all about dry hopping, insane amounts of it! will recommend to also start dry hopping right during fermentation to leverage some of the bioconversion.... when I say insane amounts I mean more than 8 oz of dry hops in a 5 gal...

    Hop and Fruit Glycosides Anyone?

Not much details about particular strains of Brett C but one of the articles (the 2nd from top to bottom) recommends pitching as many strains of Brett C you have available to increase the chances for one in the group to do the job, this other wiki has other references and more details about...

    Hop and Fruit Glycosides Anyone?

No end in mind here other than looking to wake up the interesting subject of hop glycosides as I don't see much homebrewing traction out there despite all the evidence. Wanted to revisit this subject as I got a hint from one of the top (smallest and fastest growing) juicy IPA craft breweries in...
