    It's a thick beer so 1.040 doesn't seem too unlikely. Darklord finishes around there and the two are similar in body from what I remember.

    Smuttynose Imperial Stout is nothing at all like Kate, though my understanding is the regular Portsmouth lineup is pretty similar to the Smuttynose beers.

    It is, and it provides a huge amount of flavor to the beer. The stuff they soak the spirals in is local and I've never tasted anything like it.

    The aromatic may come through a little but the Special B probably won't stand out. If you think you need more than what you have from the Crystal and Vienna then I would switch to a darker base malt will help (go to Maris Otter, Golden Promise, or Pale Ale malt.)

    The only thing I don't get is the inclusion of Special B and Aromatic... what are you going for with adding those? (Not saying it will taste bad, just curious why.)

    Simcoe and Amarillo in the boil (equal blend for each addition) then a blend of Simcoe, Amarillo and Citra for the dry hop.

    So brew the Old Ale without Brett. I don't like Brett and that is what I would be doing.

    5 Hour Energy is mostly vitamin B and flavoring. I doubt it would have much effect at all.

    I find SN Harvest to be a bit one dimensional in the hop department. I'm going to stick with it being the hops.

    I agree, I don't think using those two hops together works for depth of flavor. I like pairing them with Amarillo personally, similar enough to not clash but just a tad bit sharper in the flavor that helps it stand out.

    The D.P. of Honey Malt is 50. Just because it can be used as a base malt doesn't mean it should ;-) Maybe I should do a 1 gallon Honey Malt SMaSH.

    I treat Honey Malt like a Crystal Malt. I try to keep my total Crystal and Honey (combined, not each) under 10% for most beers, some beers can use more but it is a sweet malt so be careful.

    Pale Ale Malt is a base malt (like an American Marris Otter) and while it is a GREAT grain for an IPA it needs to be mashed and a 1/2# would not make that much of a difference. If you want to use some Pale Ale malt I would go this route: 6# Extra light DME (I like Briess Golden Light) 2# Briess...
