    A Nice Belgian

Yes, I'd definitely swap some of your pils malt with some sugar. You don't have to use so-called "candi sugar" and you don't even have to attempt to invert sucrose on your stove. Since this is a lighter beer, you can simply use dextrose (corn sugar). It's very pure and it won't lend any...

Trying to perfect an english barleywine!

Specifically, what kind of flavors does the maple syrup impart to the finished beer?

Trying to perfect an english barleywine!

Thanks for the reply. Yeah, that was our first attempt, and it's definitely a tasty homebrew, but it really doesn't capture what makes a real English barleywine so great. It lacks the intense malty aroma and intense malty flavor of the style. It also needs more mouthfeel. I am currently...

Trying to perfect an english barleywine!

Have any of you made some super tasty barleywines?

Trying to perfect an english barleywine!

Hey all, It has been a while since I last posted, but I have not given up on brewing at all. So far, my best beer has been a slight approximation of an English barleywine. My friend and I had originally intended to brew an ESB, but I bought a lot of extra Maris Otter pale malt, and we decided...

How do you feel about corn/maize as an adjunct?

Hmm, but do you notice corn in other brews? I notice a distinct taste, especially in Yuengling products. Unless they're doing something different with it that homebrewers don't normally do. Although I certainly don't mind beers that use rice.

How do you feel about corn/maize as an adjunct?

I was wondering if I'm one of the only people who hate corn in a beer. I associate the taste with all of the cheap american light lagers, like Coors, Budweiser, and Miller. I come from Pennsylvania, and I tread dangerous ground when I talk about how bad Yuengling Lager is with its high content...

    Dogfish IPA

Promash seems to come with a recipe for Victory Hop Devil IPA, which i greatly prefer over either the dogfish head 60 minute or 90 minute ipa. Just a personal preference, of course, but because I live in the general area of both breweries, I've had them several times at both locations, and I...

I don't like pumpkin beer, or caramel or vanilla

probably ground with his other grains. ;) They are talking about malted barley that's roasted to a particular degree, not about actual chocolate.

Opinions on an ESB recipe, please

Hey, no problem. I definitely appreciate the comments and feedback, and your input was certainly the type that I was looking for. I was just trying to explain the reasoning behind the grain bill. I brew with a friend of mine, and we alternate beers. On one session, I'll contribue the recipe...

Opinions on an ESB recipe, please

I hear ya. I've been reading "Radical Brewing" by Mosher, and he suggests getting your malty flavor from a greater amount of lighter grains rather than a smaller amount of darker grains for english beer. I was just hoping that the amber malt will fill in on the flavor end, and that is in the...

Opinions on an ESB recipe, please

Thanks for the responses, people. Yeah, I remember having about 50 IBU in Promash, so maybe i had 1.5 oz NB at the beginning of the boil. Does everybody think that the crystal is a bit much? Perhaps i could substitute a half pound or pound extra pale malt and go with only 1 or 1.5 lbs crystal?

Opinions on an ESB recipe, please

Hey All, A friend and I are about to brew an ESB, and we were wondering what everybody thought about our recipe. I'll get right to it without further adieu: 8 lbs pale malt 2 lbs amber malt 2 lbs 10L crystal 1 oz Northern Brewer (60 Min) 1 oz E.K. Goldings (30 Min) 1 oz E.K. Goldings (15...

A godsend for all of us who brew Belgian style ale!

Hey, all... I don't know if anyone already posted about this, but now we can get real Belgian candi syrup, which is supposedly identical to the stuff that brewers use in Belgium. Check out this link, although you can probably also get it elsewhere...

    Who here uses corn?

It might sound weird, but I actually don't mind rice in a brew if there's no corn. The Japanese beers like Kirin Ichiban are definitely not objectionable to me. I'd like to know what is different about the fermentation of corn sugar. Anybody have the chemistry knowledge to know why the taste...

    Who here uses corn?

I hear ya, but i probably wouldn't make a beer when the grain bill includes corn, but pretty much only because I don't like corny beer styles. But to each his own, and that's exactly why we brew!

    Who here uses corn?

I'm just curious if any of you (or many of you) use corn once in a while in your beer. I've seen some discussion about it, and honestly, I can't imagine why anybody would use it in their beers. i think it imparts a terrible flavor... It's the reason why I think Yuengling Lager is a horrible...

Beer Recipe that dosn't taste like beer

Something like Lindeman's Frambois tastes nothing like beer to me. I would never recommend an american light lager that's full of corn like bud, coors, or miller. They might not taste very "beery" but they are nasty! By the way, I lump Yuengling Lager into that nasty type of beer as well...

    Cat's Meow

I'm sure they have backups. Besides, i've downloaded the whole thing and I'd be happy to upload it back to them.
