    I have brewed and enjoy a British mild I think an alt beer sounds like a good idea I can ferment and lager it with the Kolsch. A Saison sounds good after that I have not brewed one in a few years. Thank you for the suggestions

    Probs with head retention in this stout

    Also you could take the caps off and put in a few grains from a yeast packnin and see if that would get the needed fermentation going. This would avoid the oxygenation of pouring out the bottles

    Peace Coffee Stout - N00b Question

    You can cold brew and add at bottling. I have done this with coffee before. Just used boiled water and a sanitized container to brew the coffee.

    Fermentation temp and questions

    fermentation can raise the wort temp 5 to 10 degrees. depending on how a five it is. if you kept the wort at 68 degrees during active fermentation you should be fine. If the air temp was 68 you might want to go a few degrees lower. Sent from my XT907 using Home Brew mobile app

    OG lower than expected

    I would not add sugar. this will add alcohol but will dry out the beer also. I would let it ride. the a real gravity is probably find and if its not you will still have beer just with a slightly lower alcohol content. Sent from my XT907 using Home Brew mobile app
