Bourbon County Stout Clone in a 5gal MLT

Ok, here is what really worked. I created a starter of Scottish ale yeast and dissolved some priming sugar in boiling water. Then I removed caps of flat beer, added some healthy yeast, and unscientifically added "some" priming sugar. Results after 2 weeks were terrific: fully carbed, although I...

American IPA My 2-time gold winning American IPA

I believe I did the same exact thing, and it was terrific. Although, I think the original recipe base beer is to credit with how well every good hop is showcased. I really don't think you can screw up this recipe! Sent from my iPhone using Home Brew

Bourbon County Stout Clone in a 5gal MLT

Right, but I only added prime dose to one bottle so I could see if it worked. Sent from my iPhone using Home Brew

Bourbon County Stout Clone in a 5gal MLT

UPDATE: Wouldn't you know it, I popped a bottle yesterday, and I've got perfect carbonation. It was a bottle that I fed Prime Dose, so we know that works...just takes a little time. I will say though that the beer tastes like Coke. Not sure if it's the recipe or the prime dose conditioning. I...

Bourbon County Stout Clone in a 5gal MLT

I'll wait. I've got nothing better to do with these bottles. But I will be surprised if it is carbonated after 6 months. The patience strategy was supposed to work for the additional yeast I added at bottling, and yet here we are, not even the slightest pfft when removing the cap. I guess they...

Bourbon County Stout Clone in a 5gal MLT

It has been 8 or 9 months. Maybe the prime dose needs more than 2 weeks, but this isn't a good sign. I have 2 more bottles with prime dose in them. I'll check again in May. Sent from my iPhone using Home Brew

Bourbon County Stout Clone in a 5gal MLT

UPDATE: I opened one bottle 13 days after adding 2 Prime Dose capsules. Nothing. Flat as an iron. I've got 2 other bottles with the stuff in them. I'll let them sit a few more weeks. Disappointing. Has anyone had any success with Prime Dose? Sent from my iPhone using Home Brew

Bourbon County Stout Clone in a 5gal MLT

I tossed 2 capsules into a bottle last night, recapped, and have it a shake. When I get home in about an hour, I'll check to see if they're still floating around in one piece... [UPDATE: The capsules have completely dissolved. That's a relief, b/c it'd be a pain to have to pour the powder into...

Bourbon County Stout Clone in a 5gal MLT

I got my Prime Dose capsules and will start adding them to my bottles in the next day or two. One thing that's lost on me however is am I supposed to break open the capsules or just chuck the whole thing in there? The container comes with no instructions. Any one know what "vegan...

I will look into that, but my thought has been that I still have fermentables in there. So if I add the pills, I'm really just using it for the yeast. I just need to set up a test where I add some yeast to some bottles and add the tablets to other bottles. Sent from my iPhone using Home Brew

Bourbon County Stout Clone in a 5gal MLT

Still flat. Shook bottles, placed them next to the heating vent getting them up to 85 degrees at least. Still nothing. I way underpitched for fermentation. Looking into opening the bottles, adding fresh yeast, and re-capping.

    High Gravity Carbonation Issue

UPDATE: Finally got around to checking gravity on batch 2, and was surprised to see adding fresh yeast and cherries got gravity down from 1.045 to 1.043 in 17 days. I added 3.5 oz of dme for priming and bottled. We'll see how it goes. only have 2.5 gallons of this, so there won't be any opening...

    High Gravity Carbonation Issue

UPDATE: First batch is flat still, but that's gonna be the status for quite a while. Second batch was on bourbon oak for 6 weeks. Last week I racked it off the oak and on to 1lb of crushed sour cherries. Gravity was still 1.045. I added a packet of Safale-05 after re-hydrating the yeast...

    High Gravity Carbonation Issue

Any luck since March? I really hope this ends successully. I am at about 6 weeks with my 10.5% bourbon barrel imperial stout and it's flat. FG 1.044. Have another 12.5% version sitting in secondary & might throw in some cherries. I'd be very disappointed if the 1056 never wakes up. I'm in...

Bourbon County Stout Clone in a 5gal MLT

Nope. I get nothing when I give it a swirl. I'll give them a shake and warm them a little and see if I can wake it up. In all likelihood, this will push me over the edge to kegging and force carbing. Way too much guessing in bottle carbing.

Bourbon County Stout Clone in a 5gal MLT

Anyone have a problem getting these high finishing gravity stouts to carb in the bottle? I added dextrose to carb at 2.0 per Beersmith. It's been 5 weeks & is perfectly flat. Do I just need to let it sit longer? Fermentation with Wyeast 1056 ended at I think 1.045. I'm wondering if abv is too...

Bourbon County Stout Clone in a 5gal MLT

UPDATE: I checked my notes, and i did take a gravity reading on the 3 gallon batch 10 days ago, when it was 1.050. Took another today, and it's 1.046. I'll see of i can put it back in warmer temps and get it down a couple more points before adding the chips. I did some checking around about...

Bourbon County Stout Clone in a 5gal MLT

Can you re-use bourbon soaked oak chips/cubes? Is there a washing technique? I made 2 batches in back to back weeks. The first was a 5-gallon partial mash batch, using a general imperial stout extract recipe but converted to partial mash & upping the grain bill with extra grains i had laying...
