    How many different temps are you guys controlling at once, and how do you handle it?

    No, I bottle condition in a spare room where the temperature stays between 68-70 degrees F. You need to maintain this temp range for 3 weeks minimum for bottle conditioning. My wife complains but I pretend not to hear and deftly change the subject.

    Just run 65-70 degree water from your tap. Don't worry about the wort. Just worry about the total volume.

    I do the same, it also helps to aerate the wort. If your going to make a 5 gallon batch then you need to know what 5 gallons looks like in your bucket.     this is sound advise, it is a good learning experience to sample as your beer changes through the conditioning process. Well at least it was for me.
