    Mozzarella - First Attempt

We took our first attempt at making cheese today. The cheese we chose to make was mozzarella. We followed this recipe: http://www.thekitchn.com/how-to-make-homemade-mozzarella-cooking-lessons-from-the-kitchn-174355 the only problem was that the rennet was slow to set the milk. after 40...

Texas Brew Pubs near Downtown Austin, TX

This doesn't feel like the right place to post this, but I think that this is the right audience to answer this question. In a week I will be going to Austin TX for business. I am going to be downtown near the convention center. I'd really like to find some good brew pubs to eat (and drink!)...

    My First Bret Beer

Very intersting and informative. You've been a ton of help! Thank you so much!

    My First Bret Beer

I'm glad I didn't aerate it then! Good to know about the airlock activity. After some time, I should see signs of fermentation such as the yeast culture on top right? Good point about this not being a sour. I should have said my first wild organism beer. :)

    My First Bret Beer

I tend to agree it is probably just a matter of waiting, but if I did something really incorrect, then I'd like to fix it sooner rather than later!

    My First Bret Beer

For my first sour beer I decided to do it with raspberries and brettanomyces lambicus. To start, I fermented a basic beer as the base with brittish ale yeast. After two weeks I transferred that beer to the secondary on top of 4.5 pounds of raspberries. I put 6 campden tables in to kill any...

    Peach Wine Clarification

That nearly all makes sense. The only part I don't understand is what happens to the CO2? Does it get dissolved into the wine and then replaced with air through small leaks around the top of the carboy? If it doesn't get dissolved into the wine, then I don't understand why it wouldn't offer...

    Peach Wine Clarification

One more thing. What are your thoughts on putting campden tablets in the wine each time I rack it to a new vessel? I've heard of people doing that, but it seems like if you treat it gently you shouldn't oxidize it too badly. Or am I wrong?

    Peach Wine Clarification

Thanks Yooper! That is what I will do. For good booze, I can have patience. That is no problem! I've been filling the carboys with CO2 and then putting the wine in when I rack. That way I don't have to worry about the headspace/oxidation, right? Thanks for saying it looks good so far. Its also...

    Peach Wine Clarification

I'm pretty new to wine/mead, but experienced with beer. I've only made a handful of batches of both wine and mead. Given that, I recently made a batch of peach wine. After active fermentation I racked it over to a secondary. The state of which you can see in the picture below. It is still...

Scotch Ale and Carmelization in the Kettle

Awesome. I'm wondering if I should drop my crystal malts or tone them down if do this. Will the kettle carmelization plus 1.5 lbs cyrstal 40 and 1.5 crystal 60 in a 18.5 lbs gain bill be too much carmelization?

Scotch Ale and Carmelization in the Kettle

I am working on honing in my scotch ale recipe. I read that the Scotts would not use cyrstal malts to obtain carmel flavors. Instead they would camelize in the kettle (boil kettle I think) to obtain a maltier camelization. I don't understand how to obtain carmelization in the kettle when I do...

Commercial beer makes me wake up

I have wondered about that, giraffe. I also wonder if they filter stuff out, then what, if anything, do they put in?
  15. ZenBrew

Commercial beer makes me wake up

Sounds like they need to distill that dihydrogen monoxide out of the beer!

Commercial beer makes me wake up

Since I have been homebrewing, I have noticed that when I drink commercial beer it really hits me hard. For example, in the evening if I drink 4 commercial beers in 6 hours I'll wake up hot and have trouble getting back to sleep. This is the case with almost any macro bottled beer. Micro or...

    Spent grain as fertilizer

I called my local extension office about this and they said I don't need to worry about it. They said organic fertilizers like corn gluten meal biodegrade similarly. I was told what I should be concerned about is putting too much grain down and ending up with an excess of nitrogen that causes...

    Spent grain as fertilizer

I don't dry them. Just stick them in the fertilizer spreader and spread them evenly over the lawn. Since I don't have any sense patches of grain I don't seem to have a problem with ants.

    Spent grain as fertilizer

So I've been fertlizing my lawn with spent grains (and some corn meal glutten to keep weeds down). These are the results.

    Yeast emergency

Thanks. I thought that would be the case, but I wanted to be sure. I don't want to screw this up!
