Personally I find that air bends never look very good after they've been straitened and re-bent. They also seem to kink more easily the 2nd time around. If you've got something to bend around that'll help a lot. I'm not trying to discourage you from trying it though, just sharing a little...

I pitched a pack of American Lager last weekend (10/30) and it just started bubbling last night (11/05). That's a whole lot longer than I would have liked but I'm going to go with it and see how it comes out.

One thing that would look cool (not necessarily cost effective, but may be worth looking into) would be to have it plated, hot dip galvanized or possibly anodized.

Sounds like a lot of fuss for .001 accuracy in you measurements. I'd be willing to bet that actual wort temp vs. calibrated liquid temp of the hydrometer would throw your accuracy off more than the point on the meniscus at which you read. I just do it the same and call that good.

Do you have problems with chill haze or clarity in general? My first thoughts are that a late addition wouldn't allow time for proteins to settle out.
