    Toffee flavor

    I was researching a Russian Imperial Stout recipe and I came accross a statement that said if you increase your boil time from 60 to 90 mins it will caramalize your sugars more and give a toffee flavor. This is an extract recipe. Any thoughts???

    I would brew as much as you can handle. You will get better hop utililzation with a larger boil.

    More info is needed, but it sounds like residue left over from the bottle cleaning process. Never use any household dish detergents. I might be jumping the gun and assuming that is what occurred. If so, contact you LHB store to get a no rinse cleaner to use before sterilizing.

    I kept mine in the primary for almost four weeks at about 69-70 degrees. No secondary needed. I just took it to a home brew meeting and everyone really enjoyed it. Disclaimer... I bottled it in September, so they have bottle aged for over four months. Well worth the wait!

    Sweetening before carbing is a plus :mug:, but I have friends that like it with varying levels of sweetness that it is easiest to throw a pack or two or three of sugar in there. Splenda was readily available and actually dissolves completely really quickly without stirring.
